Parents' Night Out







Last month, we enjoyed an annual night out as parents.

Our gathering was again graciously hosted by the Tanners.

Adriana taught us all how to prepare a delicious Colombia recipe and she

tested each of us with a fun quiz on Colombia!










We enjoyed our night out together and we thank the Tanners for their

terrific hospitality!




Adriana's Recipe for

ARROZ CON POLLO


- Two Cups of Rice

-Two or Three Chicken Breasts

-One Small Onion (optional: Green Onion)

-One Small Tomato

-One clove of Garlic

-One Can of Peas and Carrots

-Cooking Oil

-One Can of Chicken Broth

-Salt and Pepper to Taste

- 1/2 Teaspoon Cumin


Cook the breasts in 3 cups water. Add some salt to the water and boil for approximately 40-45 minutes. In the meantime, finely chop the tomato, onion and garlic. Put two Tablespoons of oil in the pot where you are making the rice and add the tomato, onion and garlic. Saute (medium heat) and add cumin and salt and pepper to taste.
This is knows as "guiso" or "hogao" in Colombia.



Once the breasts are cooked, bring them to a cutting board and either cut them in little pieces or shred the meat. Make sure you keep the water they were cooked in - which now is chicken stock. You will need a total of four cups of chicken stock, so you will need to
add some from a can.



Add the uncooked rice to the pot and mix well with the "guiso". Add the four cups of chicken stock and bring to a boil. Leave the heat on high until the level of the water comes down to the level of the rice and small bubbles start to form on the surface. Add the chicken and peas/carrots, bring the temperature to low and cover. Let it cook for another 20 minutes. Uncover and mix well with a fork. Let it sit for about 3-5 minutes and serve.


6-8 portions.
